One of the least-expensive kitchen countertop options is wood. You don't have to go the way of pricey foreign wood grains that claim to be eco-friendly. You can outfit your kitchen in furniture grade, veneer plywood that's mounted onto your existing counter.

Mark Powers of The Hardware Aisle states:

After trimming out the edges with strips of the actual wood and sealing the new surface with a quality clear coat. It's the perfect solution for the renovator on a budget, the renter, or the quick-fixer-upper who needs to hide the hideous counter before putting the house on the market.

    Good infor Dave, thanx. I was wondering about both the things you addressed - durability and where to get it.

    plywood has a top layer of ~1/32", so it wouldn' take much to wreck such a countertop. butcher block countertops made of strips of wood glued together is a better bet. ikea sells slabs of butcher block for real cheap.
